It might sound a bit complicated, but this recipe is very simple, delicious, and dangerously addictive!
What we need is either a good mixer, a blender or a robot coupe. Some sundried tomato, 1 shallot, a handful of basil, a bit of walnut, fresh baguette, a bit of parmesan, 2 cloves of garlic, and a bit of butter.
Slice up the garlic, mix it with the butter. Slice wedges in the baguette, and fill them with the butter and put it in the oven (about 180C), till the butter melts.
Meanwhile, add your sliced shallots and part of the sundried tomato, in a clean mixer. Puree it. Add the remaining tomatoes, with its oil, and puree it again. Slowly start adding the walnuts, if the mixer stucks, just add more olive oil, or a bit of butter. When they are soft, add the basil, and puree them together.
When the bread is ready, grind some fresh parmesan and pure it over the top.
Its a nice starter, or snack if guests come over or for a movie night with some rose wine! enjoy!
