Recipe: Mango-Coleslaw Salad

MANGO-COLESLAW-SALAD

Coleslaw or slaw is a very simple salad, with a shredded raw cabbage base. Its very popular all around the World, but its originated to The United States. Its hard to tell, which is the “original” recipe, as it changes in every region and state. The most popular version is still the cabbage-carrot-onion and mayo mix. But, to be honest it all comes down to creativity, and what we find in our fridge, it can be anything from wallnuts, apples (no its not a Waldorf!), broccoli, so pretty much anything.

I picked the mango. I love this fruit, it tastes so refreshing and nice, also its amazing how many things we can make from it. dried chips, sauce, chutney, marmalade, its perfect for some salads, and next to game meat.

The recipe is easy as a,b,c- in about 15 minutes we can make a perfect side dish for bbqs, or for a gourmet dinner even!

Ingredients:

  • 1 Shredded Cabbage
  • 2 greated carrots
  • 1 big red onion, finely chopped
  • 2 medium-big mangos, nicely diced
  • 1 cup sour cream or creme fraiche
  • 2 tblsp dijon mustard
  • 1 juice of lemon
  • 1 tsp sugar
  • salt, pepper

What happens now? Just mix all ingredients together in a big bowl. Serve cold! Enjoy!
